An exquisite tomato sauce is prepared, which will cover some tortillas stuffed with shredded chicken, and rolled into taquitos. They are baked and you will have a delicacy to share with your friends and family.
Ingredients
- 18 tortillas, lightly fried and drained
- 50 gr grated cheese
- 6 roasted tomatoes
- 1 cooked chicken breast, shredded
- 1 tablespoon of butter
- 1 onion, minced
- 1 chipotle in vinegar
- 1 clove garlic, roasted
- Butter
Directions
To prepare tomato enchiladas you have to grind the tomatoes, garlic, onion and chipotle.
Fry this sauce in the hot butter.
Put the tortillas, soaked in the sauce, on a plate slightly greased with butter.
Fill them with the chicken; roll them into a taquito shape.
Bathe with the rest of the sauce and sprinkle with the cheese.
Bake in a hot oven for ten minutes before serving.
