Pico de gallo is a typical Mexican salad based on fresh vegetables or fruits cut into squares. Although there are numerous varieties in each region, the most common is the mixture of tomato, onion and green chilies, thus forming the colors of the Mexico's flag . The pico de gallo is a common accompaniment to nachos, tacos and chicharrón, although it can also be served with other dishes such as cold soups, meat or fish.
Ingredients
- 1 large tomato or two small tomatoes cut into squares
- ⅓ Medium onion diced.
- 2 serrano peppers or 1 finely chopped jalapeño
- 1 lemon juice
- ⅓ cup of chopped coriander
- Salt
Directions
Place the chopped tomato, onion and chili in a bowl. Stir well, and add the lemon juice and coriander. Stir again very carefully so that the ingredients maintain their texture. Seasoning with salt. Cover the bowl with plastic wrap and refrigerate for at least 20 minutes before serving.
